After a lot of request since we established our workshop,
we are pleased to announce our new product “Frozen Hand Made Organic Natto in mid cup”.
There are some ideas implemented to provide the best quality as frozen natto, please see below for details 🙂

Product name : Frozen Hand Made Organic CHU/OOTSUBU Natto in mid cup
Size : 80g (2 Serves)
Shelf Life : 180 days
* No sauce included, Dai’s Natto recommends Shiro-dashi or Soy Sauce.
タレはついていません。Dai’s Nattoは白だしやお醤油をお勧めしています。
★ 2 ingredients only, Australian Mid/Large size Organic Soybean and Natto Starter imported from Japan.
原材料は2つのみ、オーストラリア産の中・大粒オーガニック大豆と日本から輸入した納豆菌です。
★ Before shipping/freezing, the fresh natto will have Secondary Fermentation in the fridge for at least 5 days to gain Umami.
低温で5日以上二次熟成させ、旨味を増やしてから出荷/冷凍。
★ Placing waterproof paper in between Lid and container after secondary fermentation, so that the humidity and air flow inside the container will be controlled, to prevent freezer burn.
二次熟成後に蓋と容器の間に耐水紙を挟み、容器内の湿度と空気の流れをコントロールすることで、冷凍焼けを防止。
★ Transporting Frozen natto in a refrigerated state until just before it needs to be frozen, so that quality loss due to freezing would be minimised.
冷凍する必要がある手前まで冷蔵状態で輸送することで、冷凍由来の劣化を最小限に抑えることが可能。
Defrosting in fridge overnight is recommended.
ちなみに解凍は冷蔵庫で一晩がおすすめです。
