- What is the white film-like substance on the surface of fresh natto?
- The white film-like substance on the surface of fresh natto is a cover of bacterial film, and is a sign that the natto is fermenting well. It is edible and completely non-toxic.
- What is this white granular substance that appeared on the surface of fresh natto?
- As fermentation progresses, crystallized amino acid called tyrosine which looks like white granules might appear. This is not harmful, but it may cause a crunchy texture and a bitter taste.
- How do you store fresh natto?

Fresh Natto should always be stored in the refrigerator. The natto spore will be active when the temperature rises above 10 degrees Celsius. Extended storage at room temperature may affect the quality of the fresh natto.
For large containers, please use a clean spoon to scoop the fresh natto, and cover the surface of the remaining fresh natto with cling wrap to prevent it from drying out, so that the flavour is less likely to be lost.
- Can I buy outside of Sydney and NSW?

Unfortunately we have not found a partner who can deliver refrigerated fresh Natto outside of Sydney safely and reasonably. Therefore currently we are only able to provide our fresh Natto to the Sydney area only.
If we can find a safe and reasonable transportation, we would like to provide our fresh natto outside of Sydney.

AS of Natto Crunchies, unlike fresh Natto which require refrigeration, it can be stored at room temperature and have a longer shelf life, so they can be sent by mail.

- Is sauce included for fresh Natto?
- Sauce is not included for Fresh Natto, though Dai’s Natto recommends Shiro-dashi.
- When is the Best Before date? What happens after the Best Before date?

The shelf life for fresh Natto is 14 days from the production date.
No dramatic changes will occur immediately after the best before date, however tyrosine and ammonia smell may occur over time.
The Shelf life for Natto Crunchies and Frozen Natto are 180 days.
- When is the best time to eat fresh natto?

fresh Natto ferments slowly in the refrigerator and the Umami flavour increases as the days go by. As a natto Otaku(geek), I recommend eating fresh natto around the best before date, when the Umami flavour is enhanced, but some of our customers prefer fresh natto when it is less fermented.
Please find your favorite fermentation stage among the ever-changing flavours.
- Why do large containers and mid cup have different best before dates?
- This is because large containers are intended for continuous use. Since the quality of the product may be affected by temperature changes and dryness caused by taking the product in and out of the refrigerator, the shelf life is set slightly shorter than mid cup, which are intended for 1~2 serve(s) and disposable use.
- Are genetically modified soybeans used ?
- We do not use any genetically modified soybeans.
- Is it safe to eat if I have a soy allergy?
- Since soybeans is the main ingredient, it is not recommended for those who are allergic to soy to eat Natto.
